Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Cream the butter, peanut butter, granulated sugar, and brown sugar together using an electric mixer on medium speed for 2-3 minutes until fluffy and light in color.
  3. Add the egg and vanilla extract and beat until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix on low speed or fold with a spatula just until combined. Do not overmix.
  6. Place some granulated sugar in a small bowl. Using a cookie scoop or spoon, form dough balls (about 1.5 tablespoons or 25 grams) and roll each ball in the sugar to coat thoroughly.
  7. Arrange the sugar-coated dough balls on the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 8-10 minutes until edges are set and lightly golden but centers still look soft.
  9. Immediately after removing from the oven, press one chocolate kiss gently into the center of each cookie.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
