These sliders feature tender, slow-cooked pork shoulder infused with sweet and tangy Korean BBQ sauce, perfect for easy, crowd-pleasing meals.

Ingredients

Scale
  • 3 to 4 pounds pork shoulder (or pork butt), well-marbled for tenderness
  • 1 cup Korean BBQ sauce (recommended: Chung Jung One)
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 12 small slider buns
  • Crispy kimchi or pickled cucumbers for topping (optional but recommended)

Instructions

  1. Trim the pork shoulder: Remove any large chunks of excess fat but leave some marbling for moisture. Pat dry with paper towels. (About 5 minutes)
  2. Mix the sauce: In a bowl, combine Korean BBQ sauce, soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes. Stir until sugar dissolves. (3 minutes)
  3. Place pork in slow cooker: Lay the pork shoulder in the slow cooker insert. Pour the sauce evenly over the pork, rubbing it in a bit if you can. (2 minutes)
  4. Cook low and slow: Cover and cook on LOW for 8 hours or on HIGH for 4-5 hours until pork is fork-tender and falling apart.
  5. Shred the pork: Remove the pork shoulder carefully—watch the hot sauce! Use two forks or tongs to shred the meat directly in the slow cooker, mixing it into the sauce. (5-10 minutes)
  6. Toast the slider buns: While shredding, toast slider buns lightly in a pan or oven for a slight crunch and warmth. (Optional, 5 minutes)
  7. Assemble the sliders: Spoon generous amounts of pulled pork onto each bun. Add kimchi or pickled cucumbers if using for a tangy crunch.
  8. Serve immediately: Best enjoyed fresh, but can be kept warm for short periods.

Notes

For gluten-free, substitute soy sauce with tamari and use gluten-free buns or lettuce wraps. Browning pork in slow cooker sear function adds flavor. If sauce is thin after shredding, simmer some liquid to thicken. Broil assembled sliders 1-2 minutes for caramelization if desired. Save leftover sauce for dipping or drizzling.
