  • 2 cups coleslaw mix (shredded cabbage and carrots)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp soy sauce (low-sodium preferred)
  • 1 tbsp sesame oil
  • 1 tbsp cranberry sauce
  • 1 tbsp rice vinegar
  • Salt and pepper to taste
  • Optional: egg roll wrappers, sesame seeds, chili flakes, sriracha

Instructions

  1. Heat a large skillet or wok over medium-high heat and add sesame oil.
  2. Add minced garlic and grated ginger to the skillet. Sauté for about 30 seconds until fragrant.
  3. Add ground turkey to the skillet. Break it apart with a spatula, season with salt and pepper, and cook for 5-7 minutes until fully browned.
  4. In a small mixing bowl, whisk together soy sauce, rice vinegar, and cranberry sauce to prepare the sauce. Set aside.
  5. Add coleslaw mix to the skillet with the cooked turkey. Stir everything together and cook for another 3-5 minutes until the vegetables are tender but still crunchy.
  6. Pour the prepared sauce over the turkey and vegetables. Stir well to combine and let simmer for 2 minutes to meld the flavors.
  7. Finish with a sprinkle of green onions and optional garnishes like sesame seeds or chili flakes.
  8. Serve hot and enjoy!
