  • ½ cup (60 g) crushed vanilla wafers (optional)
  • Pinch of salt

Instructions

  1. Mash 3 large ripe bananas in a medium bowl until smooth but slightly chunky (3-4 minutes).
  2. In a large mixing bowl, combine sweetened condensed milk, vanilla extract, and a pinch of salt; stir until blended.
  3. Sprinkle instant vanilla pudding mix over the condensed milk mixture and whisk vigorously for about 2 minutes until thickened.
  4. Fold mashed bananas gently into the pudding mixture until evenly distributed.
  5. Whip 2 cups heavy whipping cream with an electric mixer on medium-high speed until soft peaks form (3-4 minutes).
  6. Fold one-third of the whipped cream into the banana pudding base to lighten it, then fold in the remaining whipped cream until smooth.
  7. Optionally, fold in ½ cup crushed vanilla wafers for added crunch.
  8. Transfer mixture to a freezer-safe container, smooth the top, cover tightly, and freeze for at least 6 hours or overnight until firm but scoopable.
