  • 3 cups crispy rice cereal
  • 1/2 cup vanilla protein powder
  • 1/2 cup creamy peanut butter or almond butter (unsweetened)
  • 1/3 cup honey or maple syrup
  • 2 tablespoons coconut oil
  • 1/4 cup dark chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a small saucepan, melt the coconut oil over low heat. Add the nut butter, honey or maple syrup, and vanilla extract. Stir gently until the mixture is smooth and fully combined. Remove from heat.
  3. In a large mixing bowl, combine the crispy rice cereal and protein powder. Stir well to ensure the protein powder is evenly distributed.
  4. Pour the melted coconut oil and nut butter mixture over the dry ingredients. Mix thoroughly until all the cereal is coated and the mixture starts to stick together.
  5. If using dark chocolate chips or other mix-ins, fold them in gently.
  6. Transfer the mixture to the prepared baking dish. Use a spatula to press the mixture evenly into the pan. Press firmly to ensure it holds its shape.
  7. Place the pan in the refrigerator for at least 30 minutes to set.
  8. Once set, use the parchment paper to lift the Rice Krispies out of the pan. Cut into squares or bars and serve.

Notes

If the mixture feels too dry, add a splash of milk to bring it together. For a nut-free version, use sunflower seed butter. Customize flavors with cinnamon or cocoa powder.
